Dates from the official sources, Vienna time. The university's own information always decides.
The answer
The MedUni Vienna SIP calendar has a question-format column; if it does not already fix the format, the format is announced only in the exam announcement. The announcement appears at least 3 weeks before the exam, while the registration window normally ends 4 weeks before. If the calendar leaves the format open, you therefore usually register before it is fixed.
What the calendar shows
Where the format column says “MC oder KAF”, the format is still open. Where it says “MC - Hauptprüfungstermin”, multiple choice is already fixed.
The university does not answer questions about an overall exam's format in advance by phone or email. The calendar decides and, if it leaves the format open, the announcement.
Two official statements on KAF
The calendar notes for certain sittings that they are mostly held as KAF, and says that the definitive format is stated only in the announcement. MedUni Vienna's general exam information says KAF is used only at repeat sittings with few candidates. Both statements stand side by side; the sitting's announcement decides which format applies.
How many answers are correct
In MC each question has five options. You choose either the one best answer (one-best answer) or as many correct answers as the question text states (Pick N). A Pick N question has 2 or 3 best answers.
Rezeptierkunde and Gerichtsmedizin
Not officially confirmed
For Rezeptierkunde and Gerichtsmedizin the official sources checked give no lead time for the announcement. An earlier Rezeptierkunde announcement stated 30 questions in one-best-answer format.

Can I ask the university in advance which format it will be?
No. MedUni Vienna does not answer questions about an overall exam's format in advance by phone or email. The calendar decides or, if it leaves the format open, the announcement.
Is the format fixed before the registration window closes?
Only if the calendar already fixes it. Otherwise it comes with the announcement at least 3 weeks before the exam, while the registration window normally ends 4 weeks before. That you then register before the format is stated follows from these two rules; the university states no separate rule on it.
In MC, how do I know how many answers are correct?
You choose either the one best answer (one-best answer) or as many correct answers as the question text states (Pick N); for Pick N there are 2 or 3.
Is KAF used only at repeat sittings?
MedUni Vienna's general exam information says so. The calendar also notes that certain sittings are mostly held as KAF. The definitive format is in the sitting's announcement.
